Fruit Salad with Vanilla Pudding

A straightforward and sugary take on a classic fruit salad recipe is Vanilla Pudding Fruit Salad. This simple dessert is the ideal dessert or ice cream topping because it features a gorgeous rainbow of fruit in a simple vanilla sauce!

Green grass, blooming flowers, bright afternoons, and an abundance of fresh produce are all reasons why I adore summer! From mango berry overnight oats for breakfast to gorgeous salads for lunch and grilled vegetables for dinner, I make an effort to include fresh summer produce in every meal. Fresh fruits and berries are of course served for dessert. The ideal way to cap off a delicious summer meal!

Usually, I end up making pies or fruit crisps, but occasionally, I like to enjoy the summer bounty with something really simple that requires no baking and very little fuss.

This dessert is a bowl of deliciousness that has every color of the rainbow in it. To make this dessert quick and simple, I use canned pineapple, mandarins, and peaches. You can also use fresh ones if you happen to have any on hand! To prevent browning, I would advise peeling your peaches (using this tomato peeling method takes only a few seconds) and tossing them with a little lemon or lime juice right away.

After draining all of the fruit, you will mix a small amount of pudding mix with the juice from one of the peach cans. This turns the fruit into a flavorful and colorful simple summer dessert by creating a sweet vanilla sauce for it. (We adore vanilla served with a fruit salad!

Serve this fruit salad with vanilla pudding plain or with Cool Whip on top for a delicious presentation. We love to spoon it over angel food cake, Greek yogurt, or ice cream when we’re craving something extra special! If desired, you can reserve some of the can’s fruit juices and stir in pudding mix to make additional sauce. I would advise preparing any additional sauce on the side rather than mixing it directly into the fruit salad because it can get pretty sweet.

For a pop of citrus flavor, I add fresh lime zest; if you don’t have any lime, you can add lemon zest instead, or even both! This fruit salad with vanilla pudding is the ideal dessert to serve a large gathering.
